The garlic bread bruschetta with salsa and guacamole is a fusion recipe made using Italian and Mexican components. Fresh mexican salsa made of tomatoes and guacamole made of avocados are topped on garlic bread and served as Italian bruschetta. This is a light, fresh and easy recipe, made using a handful of ingredients, in no time and yet very comforting and mouthwatering. Ingredients:
For Garlic Bread Bruschetta:
1 Garlic bread Loaf
75-80 grams softened Butter
1.5 tsp. Mixed Herbs
1 tsp. Red Chilli Flakes
Salt to taste (Optional)
For Guacamole:
2 Avocado
1 medium sized Onion
2 medium sized Tomatoes
3 tbsp. chopped Green Coriander
Juice of 1.5 Lemons
0.25 tsp. Cumin Powder
Salt to taste
For Salsa:
2-3 medium sized Tomato
1 medium sized Onion
0.5 Capsicum/ Bell Pepper
5-6 tbsp. chopped Green Coriander
5-6 cloves Garlic
2-3 chopped Green Chillies
Juice of 1 Lemon
Salt to taste
Method:
1. Chop all the vegetables and then preheat the oven at 180 degrees centigrade.
2. Cut the garlic bread loaf into slices. Spread butter on them.
3. Sprinkle salt, red chilli flakes and mixed herbs on the garlic bread slices.
4. Bake the bread in a preheated oven for 12-14 minutes or until crisp.
5. Mix all the ingredients for salsa together and keep it aside.
6. Add the chopped avocado in a bowl and mash it slightly.
7. Add all the remaining ingredients for guacamole to the avocado, mix well and keep aside.
8. Serve the garlic bread bruschetta hot with cool salsa and guacamole.
Notes:
1. If garlic bread is not available, you can use normal bread slices and spread butter over it, mixed with 2 tsp. garlic paste and bake it similarly for 10-12 minutes.
2. To avoid the the chopped avocados or prepared guacamole from blackening, keep the avocado seed in the same bowl along with them
3. You can decrease the quantity of ingredients if using the dish as a starter.
4. The oven temperature and timings differ from oven to oven so keep an eye on the garlic bread while baking.
